Hey everybody, Crafty Chick here! So this weekend I tried an awesome cinnamon roll recipe created by my amazing Culinary Arts teacher! It is THE BEST I have ever tasted (and I have tasted a lot of cinnamon rolls)!
Preheat oven: 400 degrees F
Dough:
In a medium size bowl sift together:
2c sifted flour
4 tsp baking powder
1/2 tsp cream of tartar
1/2 tsp salt
2 tsp sugar
Using a pastry blender (or two knives slicing in opposite directions) cut in 1/2 cup shortening until mixture resembles coarse crumbs. Using a for mix in 1/2 cup sour cream in biscuit mix.
All at once add 1/2 cup 7-Up (yes it seems weird but that is what makes it fluffy) and stir in ONLY until dough follows for around bowl.
Turn dough out onto a lightly floured surface; knead gently 8-10 times.
Roll dough into a 9x12 inch rectangle.
Place 1/4 cup butter in a custard cup and heat in microwave oven for 12 seconds to soften. Spread softened butter onto dough (leave a one inch seam on the 12in. side unbuttered and without filling), sprinkle with filling below:
Filling:
In a small bowl mix together and sprinkle over butter
1/4c granulated sugar
1tbsp cinnamon
Starting on the 12 inch side that has butter and filling, roll dough. Pinch the seam.
Now here is the cool part! Using a piece of thread cut dough into 1 1/2 peices. Slip thread under dough log and overlap the top, pull up through dough. Marvel at how awesome the swirl looks!
Place on a greased baking sheet. Bake for 12-15 minutes or until golden brown.
Frosting:
Using an electric mixer, cream together
2oz. Cream cheese
1/4c butter
2 tbsp milk
1/2 tsp vanilla
Gradually add in 1 1/2c Confectioners' sugar (powdered sugar) and 1/4 tsp salt until light and fluffy.
Spread over warm (but not hot) cinnamon rolls.
